Coyoty eats a provolone and cheddar BBQ roast beef melt.

Roast beef, barbecue sauce, provolone cheese, cheddar cheese, peppers, and onions. From the Corner Cafe at Tunxis Community College in Farmington, CT.

It turns out that provolone and cheddar are a good cheese combination. It's stretchy when hot, and nicely chewy when cooled, like mozzarella. Now I prefer it on melt sandwiches.
