I had a thawed 16 oz. bag of easy-peel jumbo shrimp and a 15 oz. can of mixed vegetables. I put half of each in a microwave-safe bowl (peeling the shrimp first) and microwaved it for three minutes. I drained it, seasoned it with pepper and Morton's Hot Salt, and mixed it with a tablespoon of butter. It was delicious. It's almost like stir-fry without the frying. I'm going to do the same thing tomorrow night with the other halves.
Microwaving shrimp is a good option for those who don't want to spend more time or effort cooking it by other methods. 8 oz. of raw shrimp will take 2 to 3 minutes to microwave, and 16 oz. will take 3 to 5 minutes. The same amount of vegetables will take the same time, or you can mix the cooked shrimp with precooked rice or pasta. You can microwave shrimp and vegetables together in the same time as the same volume of shrimp alone.
You should be able to adapt any recipe to use microwaved shrimp. For example, you can melt butter, lemon juice, and garlic together to mix with the shrimp for a quick scampi.
