Coyoty eats haupia (Hawaiian coconut pudding).


Noh of Hawaii haupia luau dessert, purchased on eBay.  A product of Hawaii.

Ingredients include sugar, coconut powder, corn starch, locust bean gum, carrageenan, and maltodextrin.

This is more of a coconut gelatin than a pudding, and it's made like a combination of both,  You mix it with water, bring it to a boil, pour it into a small pan (I used a Rubbermaid sandwich container), and refrigerate for about an hour to set.  When set, you slice it up into cubes and serve.

The set pudding is mostly translucent, like a junket, with a thin white layer on top.  The taste and consistency is like a coconut junket.  I'd intended to sprinkle it with nutmeg, but it slipped my mind.  I'll try to remember next time I make it.
